If you want to experience a dash of India, you must experience Holi, the festival of colours. From time immemorial the festival sparks a spirit of joy and togetherness ushering the New Year with goodwill and hope. People of all ages gather in the streets and deck each other with fragranced coloured powder. When the festivities are over the streets and the faces of the people represent literally the multiple colours of the rainbow.
The official Holi celebrations this year is scheduled on the 27th of March. Hyatt Regency Perth will be celebrating the festival of Holi between 18th and 28th of March with a special array of Indian cuisine at its award winning restaurant, Café to mark the festivities. Chef Sathiamurthy Marimuthu from the Grand Hyatt Singapore will be specially flown in for this and will be given the free-hand to prepare some of the best culinary delights from the sub-continent. He will be preparing some of his favourite Malay Indian dishes which will include chicken tandoori, Goa Fish Curry, tandoori lamb chops and mutton Rogan josh.
Chef Sathia mentioned that the key element in preparing the dishes are the careful work that goes into it and also the sauce that forms the binding element of the dish. He prefers a slow cooking process, something that he feels is essential in bringing about the perfect aroma and taste that is so synonymous of this style of cooking.
