Australia’s top chefs entertain world’s finest chefs with Australian brunch


Melbourne has already been selected as the host destination for the World’s 50 Best Restaurant awards 2017. To celebrate the occasion, Tourism Australia sent four top chefs of the country to New York to demonstrate what the finest chefs and food & wine media of the world can expect when they visit Australia next year.

Four chefs – Peter Gilmore, Neil Perry, Dan Hunter, and Ben Shewry – entertained the guests with Australian BBQ Brunch on the rooftop of New York’s 5-star NoMad Hotel. The names of renowned international foodies like Ashley Palmer Watts (Dinner by Heston Blumenthal), Virgilio Martinez Veliz (Central), Massimo Bottura (Osteria Francescana), Yashihiro Narisawa (Narisawa), Mauro Colagreco (Mirazur), Dan Barber (Blue Hill at Stone Barns), Joan Roca (El Celler de can Roca), Dave Pynt (Burnt Ends), Daniel Humm and Will Guidara (Eleven Madison Park), Magnus Nilsson (Faviken), and Vladimir Mukhin (White Rabbit) were on the guest list.

Brae’s chef and owner Dan Hunter entertained the guests with a series of small bites consisted of nasturtium and finger lime, prawn, lemon aspen tart with raw pea, and salt grass lamb. Peter Gilmore from Bennelong Restaurant served Australian sea urchin in a dish of uni rice, fish maw, and umami broth.

Attica’s Ben Shewry presented Paroo Kangaroo, emu, and smashed avocado on toast. Neil Perry served a selection of Australian seafood on BBQ while world-famous Australian Wagyu farmer David Blackmore presented raw Wagyu beef, raw fungi, and fermented rye.

Wine Australia gave final touch to the event with a selection of fine wine including Moorooduc Estate Pinot Noir, Leeuwin Estate ‘Art Series’ Chardonnay, Pewsey Vale Riesling, Jansz Premium Cuvée, and Cirillo ‘The Vincent’ Grenache.

Lisa Ronson, the Chief Marketing Officer of Tourism Australia, considered Australia to be the perfect destination for hosting the World’s 50 Best Restaurant awards due to its rapidly growing gastronomic excellence and culinary reputation.

Tourism Australia will work with Wine Australia, Visit Victoria, and William Reed Media to organise the event successfully.
